Your Countertop and Backslash defines your Kitchen. There are so many options out there we could be here all day if I gave you the Pro's and Con's of each option. Although there is nothing like Granite for the countertop and the Backslash should compliment it.
When doing a backslash I always suggest under counter lighting on a dimmer switch. It just gives the kitchen a softer fell when entertaining plus the extra light helps when preparing the family meals.
